I love Saturdays! Sleeping in and doing whatever your heart desires. Today I spent it winning my husband’s heart again by making this scrumptious cake:
To make banana cake: Grease 9×13″ pan. Cream well 1-1/2 cups sugar and 1/2 cup butter. Add 2 eggs and beat well. Combine with the following: 1 t. vanilla, 3 medium bananas-mashed, 1 cup buttermilk (I use regular milk with a splash of vinegar. Let it sit for a minute before adding), 2 cups flour, 1 t. baking powder, 1 t. baking soda, and a pinch of salt. You can also add 1 cup of nuts if you so desire. Bake at 350 degrees for 30 minutes or until done. Let cool and ice with almond icing. To make icing, mix milk with powdered sugar until it has the consistency of glue. Then add almond extract and whip in butter until it’s as think as you’d like the icing to be. Delicious!
Make this cake and you’ll have a very happy man.
Other things that made this week great:
- Mason took Friday off and we spent the entire day doing nothing and eating Cafe Rio burritos.
- The weather has been beautiful here in Idaho…finally. I love the sunshine.
- I held the camera I’ve been dreaming about for months! Mason took me to the store and I got to mess around with it. I’ve been saving up for a long time for a nice camera and I’m super close to having the funds.
